Coop Granola
Recipe from Jo Davis
Dry ingredients:
3½ cups rolled oats
2 cups whole wheat flour
½ cup soy flour
½ cup unsweetened coconut
2 tsp. salt
1 cup wheat germ
1 cup sesame seeds
½ to 1 cup walnuts
1 cup cashews or almonds
½ to 1 cup oat bran
Wet ingredients:
¾ cup oil
1½ cup honey
½ cup water
Mix dry ingredients. Heat wet ingredients. Stir together well. Spread on oiled baking sheets with good rims. Bake at 325 degrees, stirring often, for about 45 minutes or until lightly browned. It will still feel damp. Cool and store in airtight container.

Apple-Date-Nut Cake

½ cup shortening
¾ cup sugar
1 egg
1½ cups sifted flour
1 teaspoon soda
¼ teaspoon salt
2 cups chopped apples
1 8-ounce package pitted dates
¼ cup brown sugar
1 teaspoon cinnamon
½ cup chopped nuts
Cream together shortening and sugar. Add egg and beat well. Sift flour, soda and salt together. Add to creamed mixture. Blend. Stir in fruits. Spread in greased pan. Combine brown sugar, cinnamon and nuts, and sprinkle over apple mixture. Bake at 350 degrees for 30-35 minutes.
